Is there a way (either in the combat profile or farming profile) that will allow mounting when vendoring, but not during grinding? Maybe a line that specifies mounting only after passing a vendor waypoint?

The bot will mount for vendoring by default, you just have to put your mount on an accessible action bar slot.
